Shawarma is time arranged vertically. Layers of seasoned meat rotate beside heat, the outside browning while the center waits its turn. The cook shaves only the cooked surface, so every serving carries thin crisp edges and softer pieces together.

Its relatives include döner and gyro, but the seasoning and table companions change from place to place. Garlic sauce, tahini, pickles, chopped salad and flatbread tell you which direction the sandwich is traveling.

Wrap or rice plate

A wrap concentrates the experience: meat, sauce, acid and bread in quick succession. A rice plate slows it down and lets you adjust each bite.
